Troy Nakamoto & David Barajas Ramirez are the partners that are Hilo Hawaii’s
Taco’s Jalisco LLLP.
Troy Nakamoto is originally born and raised in the greater part of Los Angeles California with ties to his family being from Guadalajara Mexico where his grandparents were born and raised and has always had the dream of opening and Mexican food truck with the authentic quality of homemade Mexican food.
Troy attended Los Angeles Unified School District and also has a Bachelor’s degree in Business Administration. Prior to moving to Hawaii, Troy was the Sales Manager for Anheuser Busch in Southern California. He relocated to the Big Island in 2008 and assumed the position as Sales Manager for Anheuser Busch in Kona Hawaii. After leaving Anheuser Busch in 2017, Troy then assumed the position as General Manager for Romano’s Macaroni Grill in 2017.
David Barajas Ramirez originally born and raised in Jalisco Mexico had a special gift of making some of the best authentic Mexican food.
David moved to Seattle Washington in 1995 and relocated to Hilo, Hawaii in 2010. He brings over 30 years of culinary experience. David has created some of the best tasting Authentic Mexican food since his younger days back in Jalisco Mexico and decided to open a Mexican food truck. David and Troy met in Hilo, Hawaii in 2017 and ever since they became very close friends who both shared the dream of offering the best tasting Mexican food on the Big Island of Hawaii.
They both decided to open October 2021 which was an awesome opportunity for sharing the same dream which they both turned into reality when they had their Grand Opening in December of 2021.
